Tuna Melts

 

Here is a great quick meal when served with a light salad and soup. This is one that I keep as a standby for

when I get too many visitors all at once.

For this you will need:

2 (6 1/2 oz.) can tuna, drained
4 tbsp. onion, finely chopped
4 tbsp. celery, diced
4 tbsp. mayonnaise or salad dressing
½ tsp. salt
½ tsp. pepper
4 hamburger buns, split or 8 slices bread
8 slices tomato (optional)
8 slices cheese (Swiss, Havarti or Cheddar)

Combine first 6 ingredients. Toast and butter bun halves. On each bun half, place 1/8 of tuna mixture, a tomato slice and a slice of cheese. Microwave until cheese melts.

Serves 4.

Note: For a change, try putting them under the broiler in your oven. It makes a world of a difference.
