
Split Pea and Ham Soup
A very tasty and inexpensive meal that can be expanded for many.
One Ham bone
1 lb Diced Ham
2 Bay leaves
Black Pepper to taste
Hot Sauce to taste
2 lb Dry Split Peas, green or yellow
¼ ts Basil
Salt to taste
In a large pot, preferably a stock pot, place the ham bone and enough water to cover it well. Add the bay leaves and boil for about 2 hours, replenishing the water as needed.
Remove the bones from the water and set aside.
To the pot, add the split peas and pepper. Bring to a boil and turn down to medium heat to simmer for 2 - 3 hours until the peas are almost totally soft.
While the peas are cooking, strip all the meat off the bones and add to the diced ham.
When the peas are done, add the other ingredients and let simmer for about 30 minutes.
Serve with hot French bread on the side.
Note: You may add finely diced carrots to the soup while the peas are cooking.
