Homemade Pork Sausage

 

This is a recipe from the day my supplier failed to deliver certain meats to the restaurant.

I went and bought some ground pork and made my own. Never ordered sausage again

from the supplier.

 

2 ½ lbs ground pork                                                               

¼ c maple syrup (optional)

¼ ts sage                                                                                

1 Tb salt

2 ½ ts fennel seed or to taste                                                                 

2 ½ ts red pepper flakes

2 ½ ts garlic powder                                                              

2 ½ ts onion powder

1 Tb olive oil

 

Mix pork, maple syrup, sage, salt, fennel seed, red pepper flakes, garlic powder and onion powder in a large bowl until evenly blended.

Shape pork into small patties.

Heat olive oil in a large skillet over medium heat; fry patties in batches until pork is browned and no longer pink in the center, 4 to 5 minutes per side.

These can be made and frozen, individually, until needed. See photo below.

Separate each with parchment paper, then wrap well in plastic wrap, making sure to seal the air out.

These will last, in the freezer for up to 6 months.
