
Tomato Basil Salad
Here is a tasty, easy side dish for your enjoyment. Excellent at those summer garden lunches.
4 tomatoes, sliced into thin wedges
½ English cucumber, sliced thin diagonally
1 onion, cut in half and sliced thin
¼ c fresh basil leaves, or to taste
½ c shredded cheese of your choice (I like mozzarella or bocconcini best)
Dressing:
2 Tb olive oil
dash hot sauce
1 Tb lemon juice
¼ ts oregano
salt and pepper to taste
Place tomato slices around the edge of a plate overlapping a bit, tucking in halved onion slices, basil leaves and cucumber slices between tomato slices. Put shredded cheese in center of the plate.
Whisk olive oil, lemon juice, oregano, salt, hot sauce and black pepper together in a bowl.
Drizzle over salad.
Note: This is best made on individual plates for better presentation.
